Spaghetti Vongole with Bottarga & Pistachio Recipe:

  1. Bring water to the boil & cook pasta according to packet (Italians say that the water should be as salty as the Mediterranean sea!);
  2. When cooked 'al dente' drain & quickly add to a serving bowl;
  3. Simply add the Clam Sauce from the jar & mix well (do not waste any of the delicious juices - the whole jar needs to be added);
  4. Add some Bottarga (dried tuna roe) & a drizzle of Olive Oil;
  5. Leave to warm through;
  6. When ready to serve, sprinkle with the Ground Pistachio & more Bottarga;
  7. Serve with Bottarga & Olive Oil on the table for extra seasoning if necessary;
  8. Enjoy with a chilled glass of white wine - Buon Appetito!
